お好み焼き (okonomiyaki) with freshly made sauce and mayonnaise.
Okonomiyaki sauce recipe (vegetarian/vegan) お好み焼きソースのレシピ(ベジタリアン)
Ingredients:
a)
- 2 dried shiitake mushrooms
- 1 sheet of kombu (~15cm x 15cm square)
- 1 yellow onion bulb
- 1 carrot
- 1 can (16oz) whole tomatoes
- 6 cloves of garlic
- ½ hand of ginger (~50g)
- 1 apple, cored
- 1 red bell pepper
- 1 liter water
b)
- 15 black pepper corns
- 5 bay leaves
- 3 cinnamon sticks
- 2 tsp nutmeg, freshly grated
- 2 tsp sansho (Japanese pepper)
- Red bell pepper 1
- 30g chinpi (dried orange peel powder) or zest of 2 tangerine-like citrus fruits
- 2 Tbsp thyme leaves, fresh
- 2 tsp sage leaves, fresh
- 15 clove buds
c)
- 1 cup soy sauce
- ½ c (100g) granualted sugar (or honey)
- ½ cup rice vinegar
- 1 tsp salt (or to taste)
Instructions:
- Peel & roughly chop the a) vegetables and put into pot and boil with medium heat, uncovered, for 1 hour (or until the volume is reduced by ½).
- Add b) and simmer for another 20 minutes.
- Add c) and simmer for another 10 – 15 minutes, or until almost all the water has evaporated (a thick, chunky paste).
- Retrieve the bay leaves, then put everything into a blender and blend until a homogeneous purée is achieved.
- Strain with a metal mesh strainer or cheese cloth to remove larger chunks for a smoother sauce, if desired.
- Simmer the resulting purée for another 10-20 minutes to make for a thicker sauce, if desired.
